Cake Bloom
Inspired by Día de los Muertos – Day of the Dead – think sugar skulls, bold, festive colors and fresh, edible blooms.
This cake is chocolate with dark chocolate ganache, salted caramel and frosted in vanilla buttercream.
Design includes all organic, locally grown fresh and pressed edible botanicals: chrysanthemum, bee balm, zinnia, thyme, corn flower, sunflower, echinacea, rose petals, marigold foliate and petals, and celosia.

The Literature of Edgar Allan Poe is brought to pastry life in this creation by Paradox Pastry. Chocolate Black Out Cake (Dark Chocolate Cake with Dark Chocolate Ganache filling) sets the stage. Edgar would be macabre-ly curious and delighted to serve this wonder at his Halloween party. How about you?
Several of Poe's works are included: "The Raven", "The Fall of the House of Usher", "The Cask of Amontillado", and the idea of his creative insanity as inspiration. I thought of how he most probably struggled to create exactly what he wanted to say, but didn't always succeed - thus, the burned pieces of paper all over the cake. I can see him drinking, hitting the opium, all in a creative frenzy, throwing the "unworthy" writings into the fire. Hope my winner liked it as much as I enjoyed making it!
